☀️ What is Sun Tea?
Sun tea is a simple, refreshing, and natural drink, prepared by infusing herbs, flowers, and sometimes fruits in water exposed to the gentle warmth of the sun.
It’s an almost magical way to capture solar energy in a cold herbal tea, without having to boil water. 🌞
Slowly, over hours, the light extracts the aromas, colors, and benefits of the plants… creating a delicate, floral drink, often scented with childhood memories, gardens, and sweetness.
🌼 Ingredients
- A good handful of caffeine-free dried flowers (chamomile, lavender, lemon balm, mint, etc.) and the tea of your choice (optional for a caffeinated version)
- Fresh garden flowers: edible roses, untreated peonies*
- Fresh strawberries (add after infusion)
- Citrus slices (lemon, orange, lime — fresh or dehydrated)
- Fresh herbs (lemon verbena, mint, basil, anise hyssop…)
- Lukewarm filtered water
- A hint of honey from Un Goût de Miel or maple syrup from Jasmino, just before serving!
*Peonies are mainly for their subtle fragrance and the "wow" factor! Make sure they are untreated and carefully picked.
🌞 Steps

Prepare your jar
Use a large glass jar washed with hot soapy water. Glass is always preferable to plastic (no toxins migrating in the sun!). -
Clean the plants
Gently rinse all herbs, flowers, and citrus with lukewarm water. -
Infuse your magic
Fill the jar one-third to halfway with fresh herbs or about 1/3 cup of dried flowers. Add the citrus slices.
Pour lukewarm filtered water to the top. Cover with an airtight lid. -
Let the sun do the work
Place your jar outside in the sun, during the hottest hours, for a maximum of 4 hours.
(If you want to store your tea, limit to 3 hours then refrigerate immediately.) -
Filter and cool
Strain the infusion through a fine sieve to remove plants and flowers. Refrigerate your tea. -
Serve and enjoy
When serving, add your fresh strawberries, some ice, and sweeten gently with your favorite honey or maple syrup.
Decorate with an edible flower or a mint leaf for pleasure.
🔎 Safety first
Even though this recipe is natural, here are some important precautions:
!!! Do not infuse for more than 4 hours in the sun.
- If you want to keep your tea: 3 hours max in the sun + immediate refrigeration.
- Never sweeten during infusion, but just before drinking.
- Wash everything well (jar, herbs, fruits).
- Avoid any animal contact (insects, birds, etc.).
- Consume within 3 days, well chilled.
